How you can format dialogue inside a french story? : french Cela devrait

I am writing up a French short story, and I have to learn how to format dialogue and quotes. I have seen many short story authors like Maupassant only use ‘les guillemets’ (« and ») like regular British quotes (" and "), but I have also seen other authors make use of a hyphen adopted by dialogue, such as this:

Within my story, I’ve dialogue between two hunters who discovered new hunting grounds:

Must I make use of the first format or even the second format?

Video COMMENTS:

Julie Hermoso: I find french the hardest language to learn not because of the grammar but because of its pronunciation. Amongst all the languages that I have learned to know basic conversations on; such as Russian, German, Spanish and Korean, French is by far the most challenging for me. I'm not bragging or anything like that, but I'm really good in pronouncing other languages because I try to copy the accent as well as the intonation in each pronunciations as precisely as possible. And I know I'm good because I always get the surprise look from people who actually speak the languages that I'm trying to learn. I always get compliments by how well I spoke them. But with French, I find myself completely struggling to pronounce the words properly which really upsets me and frustrates me at the same time because I really want to learn French!! I don't know what to do.  :(
